Good morning from New York! Do you guys like it when I post earlier in the day? If I was able to post three times a week would you guys like that? Sorry to start today off with so many questions, but it’s been a little while since I shared my last What I Eat In A Day with all of you and I’m super excited to share this video with my Dutchie friend Anna Nooshin!
My friend Anna came by in New York and we decided to cook together. I find cooking with fiends to be such a fun activity to do, it’s even perfect for a date night, anyone agree? When is the last time you made a home cooked meal with your loved ones?
So lunch in this video was quite the experiment, that is why I kept it very simple for the evening. For my next What I Eat In a Day video I am thinking about showing you how I eat and train before a shoot. Would you guys be interested in seeing that?
Also, I want to take a second today to show my gratitude for all of you. I have some extremely exciting news about a project that I still can’t believe is happening and without each and every single one of you wouldn’t be happening.

Breakfast- Acai Bowl:
– 1 Banana
– 1 Frozen Acai pack
– 1 Cup of Frozen Blueberries
– Spoon of Frozen Raspberries
– Home made Granola ( Video Recipe https://bit.ly/2J8KQUX )
– Fresh Mango
Lunch- Miso Cod Lettuce Wrap ( 4 servings)
– 6-7 ounce Cod or Seabass
– Marinade: 3tbsp Sake, 3 tbsp Mirin, ½ cup Miso, 2 tsp sugar
– Topping optional sweet potato chips
Mix all the marinade ingredients together, marinade the fish and let this sit for at least a couple of hours in the fridge. Bake in in the oven for 15 min on 350F
Lunch- Quinoa salad ( 6 servings, recipe by @Pickuplimes)
– 2.5 cups cooked Lentils
– 3 cups cooked quinoa
– 1 cup cooked edamame
– Red bell pepper
– 3 cups fresh spinach
– Dressing: ¼ cup tahini, ¼ cup water, 2Tbsp soy sauce, 2tsp apple cider vinegar, 1 tsp miso paste, 1 tsp onion powder, 1 tsp sriracha (optional)
– Topping: ¼ cup roasted pumpkin seeds, 2 tbsp fresh scallion
Mix all the dressing ingredients together. Grab a bowl and add cooked quinoa, cooked lentils, edamame, red bell pepper, fresh scallions and spinach together. Add the dressing. Mix again.
